Dan's Egg Dish

Ingredients

1/4 pound Butter
10 Eggs
1/2 cup Flour
1 tsp Baking powder
1/4 tsp Salt
1/4 tsp Fresh ground pepper
1 lb. Cottage cheese
1 lb. Monterey jack cheese, shredded
Optional: Assorted vegetables, Broccoli, red onion, mushrooms, red or green peppers
Optional: Meat, ground breakfast sausage, diced ham, or bacon

Instructions

1. Cook desired meat. We usually cook breakfast sausage with one onion. Add other desired diced vegetables if desired. Drain fat.

2. Melt the butter and mix with eggs in a large bowl. Add flour, baking powder, salt, pepper, cottage cheese, and 1/2 of monterey jack cheese to the butter/egg mixture. Stir well.

3. Place meat/vegetable mixture on the bottom of lightly greased 9 x 13 casserole dish. Pour mixture on top of any vegetables/meat.

4. Top mixture with remaining 1/2 of cheese. Cook at 400 for 15 minutes. Reduce to 350 and cook for an additional 35 to 40 minutes until cheese on top is golden brown. Serve with fresh salsa.

Notes

Cover with tin foil last 15 minutes or so if getting too brown. Done when knife or tooth pick comes out clean.
