2 stalks Celery
3 Carrot
1 Onion
3 tbsp Olive oil
2 cups Diced ham
2 tsp Italian seasoning
1 tbsp Dry parsley
2 tbsp chicken base
3 grinds Black pepper
2 handfuls Small pasta shells
1 large can Whole tomatoes w/juice, 28 oz.
2 tomato cans Water
3 Bay Leaf, (later removed)
1 tbsp Summer savory
1 tsp Sugar, to taste
1. Cut celery, carrot, and onion in a small dice. Saute in olive oil until they are partially cooked. Add diced ham and continue to saute until ham is warm.
2. Add tomatoes with juice and 2 cans of water. Add seasonings and simmer for 2-3 hours, stirring occaisonally.
3. Last half hour add pasta shells.
4. When serving, sprinkle with shredded parmesean cheese, if desired.
