1/2 1 pound box Bowtie pasta
1/2 bag Fresh baby spinach, chopped julienne style
1 container Crumbled feta cheese
2 cups Cooked chicken, chopped
1/4 cup Toasted pine nuts
1 pkg. Good Seasoning Zesty Italian salad dressing mix
15 - 20 Grape tomatoes, sliced in half, add as much as desired
20 Pitted kalamata olives, sliced in half
1. Cook pasta according to package directions.
2. Toast pine nuts in oven at 275 for approximately 10 - 15 minutes, tossing once.
3. Prepare salad dressing according to package directions, but substitute balsamic vinegar instead of regular vinegar.
4. Toss salad dressing and ingredients with pasta.
5. Serve immediately.
Excellent chilled. If not serving right away, do not add fresh spinach as it will get soggy. Add and toss right before serving. Great for potlucks. Can also add thinly sliced red onion or substitute sundried tomataoes for grape tomatoes if desired. Very forgiving recipe. Just add want you like and delete ingredients you don't like.
