Ingredients

Soy Dressing:

3/4 inch Ginger Root
2 Fresh Green Chilis
2 tsp Sugar, (likes a little more to taste)
2 Garlic Cloves
4 tbsp Rice Wine Vinegar, (likes a little less to taste)
1/4 cup Soy Sauce
4 tbsp Peanut Oil
2 tbsp Sesame Oil

Noodle Salad:

8 Ounces Chinese Thin Egg Noodles
6 ounces Snow Peas or Snap Peas
4 Green Onions
1 1/2 Ounces Unsalted Peanuts or Cashews
1 Small Bunch of Cilantro
12 Ounces Cooked small shrimp or Chicken

Instructions

1. Process soy dressing incredients in mini food processer.
2. Cook noodles according to package directions. (cut up noodles a bit)
3. Mix sauce with noodles.
4. Mix remaining ingredients.
5. Chill until ready to serve.

Notes

Best if sits for a couple of hours.
